I think it's pretty clear that her parents' over-sheltering stunted her emotionally.

Until her character development at the end of the film, she hasn't really learned how to deal with her problems or manage her emotions. When her parents were alive, the answer was always hide (from) the problem and have her parents take care of it / coach her through it. Once they die, it's clear that she has no idea how to get along without them because they haven't taught her how to do anything for herself.

She has a quite mature personality but she herself isn't very mature due to her lack of socializing and being closed in her room. Like Rapunzel, though Rapunzel is a bit childish herself.
